I mean - I LOVE tomato based food and it's even better when it comes with bread or carbs, in general :) Here's a very simple tomato and bread recipe, below



Recipe:

  • 2 Tomatoes. I used one pint of cherry tomatoes

  • 2 slices of rye bread, or any bread good for toast

  • 2 tbsp of olive oil

  • 2 tbsp of balsamic vinegar

  • Trader Joe's 21 Seasoning Salute or chopped basil/oregano

  • Salt/Pepper

  • Red Pepper flakes

  • Parmigiano cheese (optional)

 

Directions:

  1. Wash and cut tomatoes into slice or in half, depending on the type of tomatoes you're using

  2. Combine and mix in a bowl, the tomatoes, olive oil, balsamic vinegar, seasoning/herbs, salt and pepper

  3. On the bread, place the tomatoes

  4. Put in the air fryer for 10mins at 350 degrees

  5. Drizzle the sauce from the mixture onto the toast (be careful, it's hot!) and grate on some cheese and add a pinch of red pepper flakes

  6. Wait for the tomatoes to cool before eating

I've never bothered to try anything lentil until I had to eat healthier. This soup has a ton of flavors with tomato based taste. It's also a great way to get rid of veggies you might have in your fridge. Check out the recipe below!



Recipe:

  • 1 onion

  • 2 tsp of minced garlic

  • 2-3 carrots

  • Optional Veggies: 1 cup of Corn, 1 Squash, and 1 Red Bell Pepper

  • 1 cup of spinach

  • 14.5 oz of diced tomato

  • 1 cup of tomato sauce (can be marinara...whatever you have)

  • 7 cups of water

  • 2 cups of lentils

  • 2 tsp of cumin

  • 2 tsp of oregano

  • 2 tbsp of vinegar

  • 1 bay leaf

  • Salt/Pepper

 

Directions:

  1. Dice up the onions and carrots and stir in pan/saucepan with a drizzle of oil on medium heat

  2. Stir until onions are translucent

  3. Mix in rest of your veggies with sprinkle of salt and pepper and stir for a min

  4. Add in lentils

  5. Add bay leaf, cumin, and oregano

  6. Stir everything together for 2 mins

  7. Add in water, diced tomato, and tomato sauce (mix one cup of water to get rest of the sauce and pour into the pan)

  8. Let it boil on medium

  9. Reduce heat to medium low and let it simmer until lentils are cooked (should be soft)

  10. Add vinegar and more salt/pepper if needed

Truth: I don't like peanut butter but whenever I make this dessert for my friends, they love it so I keep making it! I use store bought brownies to save time and energy while making the frosting. Full recipe below!


Recipe

Brownies

  • Any store bought brownie mix

  • Replace water with milk, using the measurement stated on the box

  • Replace oil with butter, using the measurement stated on the box

  • Egg (however amount the box asks for)

Frosting:

  • 1 cup of Creamy peanut butter (not natural or chunky)

  • 1 cup of Powdered Sugar

  • 1 tsp Vanilla Extract

  • 3 tbsp of room temperature butter

  • 2-5 tbsp of Heavy Cream or Milk, depending on how soft or thick you like frosting

 

Directions:

  1. Pre-heat oven based on the temperature as stated on the box

  2. Combine brownie mix, milk, butter, and egg until combined

  3. Bake for the recommended time as stated on the box

  4. Completely cool the brownies

  5. In a bowl, add room temperature butter. You know it's ready when it leaves an indent of your finger tip

  6. Add powdered sugar and whisk with butter until smooth. It might look clumpy at first but it will be smooth if your butter is room temperature

  7. Splash in some vanilla

  8. Add heavy cream or milk. Add 2 tbsp at a time depending on your preference in thickness of frosting

  9. Whisk until combined

  10. Spread frosting on the cooled brownies
