My Favorite Lentil Soup

I've never bothered to try anything lentil until I had to eat healthier. This soup has a ton of flavors with tomato based taste. It's also a great way to get rid of veggies you might have in your fridge. Check out the recipe below!

Recipe:
1 onion
2 tsp of minced garlic
2-3 carrots
Optional Veggies: 1 cup of Corn, 1 Squash, and 1 Red Bell Pepper
1 cup of spinach
14.5 oz of diced tomato
1 cup of tomato sauce (can be marinara...whatever you have)
7 cups of water
2 cups of lentils
2 tsp of cumin
2 tsp of oregano
2 tbsp of vinegar
1 bay leaf
Salt/Pepper
Directions:
Dice up the onions and carrots and stir in pan/saucepan with a drizzle of oil on medium heat
Stir until onions are translucent
Mix in rest of your veggies with sprinkle of salt and pepper and stir for a min
Add in lentils
Add bay leaf, cumin, and oregano
Stir everything together for 2 mins
Add in water, diced tomato, and tomato sauce (mix one cup of water to get rest of the sauce and pour into the pan)
Let it boil on medium
Reduce heat to medium low and let it simmer until lentils are cooked (should be soft)
Add vinegar and more salt/pepper if needed
