This is a very delicious and easy way to eat beans, especially for folks who generally don't like it (aka me). The slight tartness from the vinegar and wholesomeness from my fav. herb (cilantro) brought joy to my life as I was eating the marinated beans! I cannot wait to make it again!

I've always wanted to make lemon bars since I watched it in Nancy Drew movie. There's a scene where Nancy Drew pulls out a lemon bar from a tin can and it just looked so delicious!



It was simple to follow but at one point, I thought I slightly over-baked the crust and filling, which I did but still tasted delicious! It was tart but not too tart, sweet but not too sweet. Enjoy!

This is a refreshing salad if you like cilantro! It takes ~10-15mins to make. It's great to have during the summer time with some margs, froze, or whatever floats your boat. Recipes below!

RECIPE - Serving ~2 people. Feel free to adjust the recipe however you like!

  • ~10 frozen/fresh shrimps, peeled

  • A quarter of red onion (optional)

  • 1 ripe avocado

  • 3-4 stems of cilantro

  • Salt/pepper

  • Half a lime

DIRECTIONS:

  1. In a small pot, boil water and shrimp until cooked (the outside should be pink while inside flesh is a little white in color)

  2. Drain the cooked shrimp

  3. Remove the tail of the shrimps and cut them into bite size - Be careful it might be hot to touch!

  4. Dice the red onions into small bits

  5. Cut avocado into bite-size chunks

  6. Snip cilantros with scissors (it's easy!)

  7. Gently combine the shrimps, avo, red onions, and cilantro in a bowl

  8. Sprinkle on salt/pepper

  9. Sprinkle on half of a lime and gently mix again

  10. Enjoy them alone or with tortilla chips!
